Winemakers Comments             

The Seville Estate Reserve label donates wines of exceptional quality, and this Chardonnay represents the very best barrels of the vintage. When selecting the barrels we are looking for wines that show purity of fruit with great balance between texture and acid. These wines have beautiful harmony and will award ageing.

 

The growing season started with a warm and dry August/September period; Victoria had its warmest winter on record. Bud burst was early with good consist growth. October to January brought wetter and cooler condition with most months reaching or going over the average rain fall. There were some extreme temperature days over November which saw a mini heatwave during the 7-20th. Seville had some sun burn damage in the Pinot Noir and Chardonnay; fruit was dropped during December and remaining fruit looked good. January was warm with average rain fall, perfect conditions for ripening. Beautiful fruit flavour ripened early in all varieties showing great potential for an early vintage. Commenced picking Chardonnay on the 23rd February and finish on the 3rd March.

Vinification:                                

Fruit is hand picked and gently whole bunch pressed. Juice is run directly to tank and gravity fed to barrel. Fermentation occurs naturally in barrel.  A range of French oak coopers and formats (225L – 500L) with 40% new are sourced to introduce oak complexity.  Following primary fermentation, maturation continues on lees for 10 months. Malolactic fermentation is not encouraged.

Tasting Notes:                            

Colour is pale yellow with a green tinge and a green hue. Bright melon/grapefruit fruits are integrated with sweet spice and almond meal/toast aromas. The palate has great focus with white peach/melon fruits and nutty lees complexity. This wine has a great length of flavour showing match stick flintiness, creamy lees and high natural acidity freshening the finish. This is a tightly wound style ready to unwind over the medium to long term.
