Seville Estate 2011 Dr McMahon Shiraz              

 Winemakers Comments:             

Dr Peter G McMahon first planted Seville Estate in 1972 and gave meticulous care and attention to his patients and to his winemaking and viticulture. In recognition, the Dr McMahon label denotes wines of meticulous effort and care.

The Shiraz is purely sourced from the original 1972 plantings. The block is one acre and produces low yields (2 tons/acre) of small berries and bunches.

The 2011 season started strong (August – September 2010) with great growth seen in the vineyard from bud burst. This was contributed by above average temperatures and good moisture left after the July/August rains. This was sort lived as October, November and December brought over 420mm of rain to the Valley; after 650mm already for the year. Giving an annual total of 1070mm. This amount hasn’t been seen since the 1980’s. Unfortunately, the rain didn’t stop; another 270mm fell in January and February leading into vintage. With so much ground moisture and above average temperatures, humidity caused major problems over the growing season. The vineyard was continually under threat from disease, mostly powdery mildew, downy mildew and Botrytis. Avoiding these diseases and potential loss of fruit was a 24/7 operation. All our time and efforts were needed in the vineyard to help manage the threats. These conditions delayed vintage by a month with Chardonnay and Pinot Noir picked the first week of April and Shiraz and Cabernet coming in late April and early May. Shiraz was picked on the 4th May; Bè: 11.5, pH:3.20 TA:6.7.

 Vinification:     

Fruit was handpicked early morning into small buckets (with bunch selection done in the vineyard). The cool fruit is brought into the winery where it is placed directly into two new 500L barrels (no de-stemming – 100% whole bunch). The fruit is then left for around 60 days on skins during which wild fermentation and wild malolactic fermentation take place. The wine and must is then drained out and pressed directly back to one of the 500L barrels. The wine is then matured for 10-12 months then bottled using no fining or filtration. This wine is 100% whole bunch, 100% wild ferment, 100% wild MLF, 100% barrel fermented using 100% new oak.

Tasting Notes:

Crimson red in color with a pale hue. Beautifully perfumed showing spice and white pepper aromas with fragrant red berry fruits. Delicate palate of red fruits with savory overtones and balanced oak. The whole bunches add complexity and drive to this soft and fine Shiraz balancing fruit sweetness and tannins. The finish is long and elegant with velvety tannins and good acidity. This is a fine and complex wine that shows beautiful depth and layers from a cool year. Drink 2018 – 2025.
