Seville Estate 2012 Shiraz                                                                        

Winemakers Comments:     

The 2012 growing season produced a great vintage. The season was similar to 2010 where the climate suited all varieties and produced elegant and balanced wines. The season started with below average winter rainfall. As most winters are relatively dry and we were still, so wet from the record rainfall at the start of the year (2011) it did not concern us. This changed during spring with record rainfall (again) dumping one and a half times the amount of rain in the Valley. With bud burst well established we feared another wet and diseased prone year. By the later part of spring (early November) we had above average temperatures coupled with above average rainfall. This fear became a reality with increased humid conditions; large amounts of resources and money went into managing the disease pressure in the vineyard. Finally some relief came over the summer period with warm weather and average rainfall. The humidity still caused problems with disease and fruit set resulting in reduced crop levels on most varieties. Although the season was difficult, the mild weather conditions started to shape the vintage into something great. This was clearly seen in early to mid February were the flavours were so well developed in Chardonnay and Pinot Noir at such low sugar levels. The honeymoon weather persisted with vintage commencing on the 16th February and all Chardonnay and Pinot Noir picked by the 5th March. This momentum was quickly lost with a very wet and cool March which stalled ripening. A couple of Shiraz and Cabernet blocks took 4 weeks to increase 0.5 of a baumè. While this was a concern it did not change the flavour development which continued to improve. By late March we started picking Shiraz and Cabernet with great flavours, low sugars and good acids and finished on the 11th April. Overall a great vintage suiting all varieties; wines are poised, elegant and flavoursome.         

 

Vinification:                         

Fruit was handpicked (with bunch selection done in the vineyard) de-stemmed into an open bin which are then tipped into a 3 ton open fermenter vats (avoiding the use of pumping). 20% whole bunches were also added and then chilled for a pre-ferment cold soak for 4 days.  Fermentation started naturally with hand plunging daily and completed in 7days. The wine was then pressed off skins and inoculated for MLF, then run directly to barrel (500L, 300L and a 225L used). Around 30% new french oak was used to mature the wine for 12 months. The wine was then carefully racked and bottled without fining or filtration.

 

Tasting Notes:                     

Bright brick red in colour with a pale hue. Aromas are complex; spice and black pepper, earthy with dark cherry fruits dominate the nose. The palate is structured with red berry fruits, black pepper and a savoury edge. The whole bunches add harmony and elegance to the wine with fragrance and savourness while also balancing the fruit sweetness and tannins. The finish is long and elegant with velvety tannins and good acidity. Drink 2015 - 2022
