SEVILLE ESTATE 2015 SHIRAZ
Winemakers Comments: The 2015 vintage was a great year that produced astounding wines across all varieties with good quantities. Great quality and quantity has not been seen in the Yarra Valley for some years and was gladly welcomed by the industry including the growers and accountants. A mild start to the growing season with October and November producing some beautifully warm Spring days coupled with good rainfall. This lay the foundation for a great start to the season and a kick start to growth in the vineyard. Mild weather conditions with light winds followed through flowering which meant a high percentage of fruit set was achieved.
Summer was also mild with average temperatures and below average rainfall. This produced massive growth in the vineyard and management of canopies become paramount. Some high disease pressure days over the Christmas and New Year break put Andrew in and out of the tractor spraying desperately to stay ahead. This paid off as there were many reports of powdery mildew outbreaks around the Valley at this time. This pressure persisted through mid-January then warmer, drier conditions during February set us up for a great harvest.
Vintage was again early with sparkling base picked on the 11th February (7 days earlier then 2014) and table chardonnay coming in on the 26th. Pinot’s and Riesling followed in the first week of March with Shiraz and Cabernet all in by the 30th. It was a tight and compact vintage that didn’t seem to slow down or come up for breath. The winery was a buzz with fruit continually flowing in and fermenters everywhere.
Fruit was handpicked (with bunch selection done in the vineyard) de-stemmed into an open bin which are then tipped into a 3 ton open fermenter vats (avoiding the use of pumping). 20% whole bunches were also added and then chilled for a pre-ferment cold soak for 4 days. Fermentation started naturally with hand plunging daily, MLF co-fermented. The wine was then pressed off skins then run directly to barrel (500L & 300L used). Around 20% new french oak was used to mature the wine for 12 months. The wine was then carefully racked and bottled without fining or filtration.
Bright brick red in colour with a pale purple hue. The aromas are complex showing darker fruits, plum and rhubarb. There is a lovely spice thread of cinnamon and nutmeg that softens and adds perfume to the wine. More earthy and savoury on the palate showing great structure from the natural skin tannin and acidity. The whole bunch character sets in the background adding savory depth while balancing the riper berry fruits. Drink 2016 - 2022
