60% SHIRAZ 40% CABERNET SAUVIGNON
This wine is made using the saignée method from each variety. The juice is run directly to old barrels where it undergoes fermentation with indigenous yeasts with no added sulphur dioxide. At the final stages of fermentation the wine is transferred to tank and then bottled. The wine finishes it’s fermentation in bottle, this creates the bubbles and leaves a yeast deposit at the bottom.
Beautiful light salmon pink with a pale hue. Lifted showing floral, musk, spice and red fruits. The bead is soft and creamy showing nutmeg, cinnamon spice that marries well with the slight residual sugar that naturally is retained. A natural style of wine that is quirky and fun with the intention for early drinking.
