2021 Rosè

60% SHIRAZ 40% CABERNET SAUVIGNON

This wine is made using the saignée method from each variety. The juice is run directly to old barrels where it undergoes fermentation with indigenous yeasts. The wine is fermented to dryness and matured on lees for 6 months. It’s then cold settled, filtered and bottled.

Beautiful light salmon pink with a pale hue. Lifted showing floral, spice and nutty characters. There is a slight undertone of reduction that adds playfulness. This follows through to the palate and complements the fresh red berry fruit adding depth and intrigue. The barrel ferment and extended lees contact give a layer of nutty texture. The acid sits in the wine but becomes noticeable on the finish, lingering for the next sip. A fresh yet textural style to drink and enjoy now.
